Leith’s Essential Cooking Certificate
I have just completed this online course and I thoroughly recommend it. I have been a keen cook for years but have learnt so much over the past 6 months. I have also found a new love of baking breads and cakes (much to the detriment of my waistline!) if you want to refine your home cooking and impress your dinner party guests then this is the course for you!

In praise of on-line learning
I have done all of Leith's online courses and I am always on the lookout for something new which this one was. It covered all about fish and was applicable to NZ even though the species of fish are not available here. On the videos they gave such a great description I was able to find alternatives.
The video instructions are clear and concise and very knowledgeable.
I finished to programme last week and am already feeling lost

Good experience with Leiths online cookery course
The online course had a good variety of lessons which covered different cooking techniques. It was nice that you could complete a lesson at your own pace.The mentors were great with providing feedback on the images shared.

Room for improvement
Well personality I didn't learn that much new techniques. I prefer if the video lesson isn't broken to that many small videos. And too much waisting of time with showing over and over again how to chop onion and garlic

The course covers many types of fish preparation and cookery, including filleting. The course is suitable for beginner cooks who don't have much experience with preparing and cooking fish, but we have also welcomed more experienced cooks and chefs looking to refresh their skills. If you are interested in courses with more challenging techniques to suit your skill level, please do have a look at our Chef Skills course. Time to bake!
Once I had worked out how to use the system on the workshop app the format was easy to use. I eagerly awaited each unit to be released each week to then be able to watch the video and learn a lot of new and different techniques. Having a mentor was really beneficial and my mentor was always really responsive, positive, helpful and constructive. If a bake hadn't gone well, she made suggestions on what to do next time and always found some positives. I learned so much not only about techniques of bread making and patisserie, also about history of some bakes, decoration and why some of the bakes didn't go well so that I could learn from any mistakes. For me, it was also helpful seeing others bakes and interacting with the 'class'. I suppose for a course like this, you will only get out of it what you put in - I loved it so I will recommend it wholeheartedly.

Chefs Skills Review
I work as a chef but have no formal training, so took the course to develop my skills and apply them in the work place. The course description says it’s aimed at highly experienced people, but I found that I already knew most of what was covered in the course. The things that I didn’t know were useful to learn, but I feel a little bit misled by the information provided about who the course is aimed at, and therefore disappointed that the money I invested feels somewhat wasted. It felt like a course for home cooks wanting to progress, and I therefore found that I actually engaged less with the content because I didn’t feel like I was learning. All of the instructors were really good, and I’m not criticising the course itself. But just as helpful feedback, I would definitely have considered a different course with Leith’s if I had had a more accurate understanding of the level of experience this course is aimed at.

You are right that this course is aimed at both the experienced home cook and those in the industry looking to develop the skills covered on this course. Our students coming to this course from the industry will have a very wide range of different skill levels. Because of this broad range of backgrounds and experience we publish our curriculum on our website to help prospective students decide which course is right for them.
The Chef Skills course covers more elevated variations of skills included on the more beginner-friendly Essential Cooking course, and so doesn’t cover some of the core skills which are covered there, as many students have completed that course first. In this course we focus on more challenging techniques and refinement. The teachers mentoring Chef Skills provide the most critical feedback on student photo uploads than on any other course in order to encourage them to meet this higher standard, often providing detailed theory/scientific explanations on how to be more effective.
We take all customer suggestions seriously and are sorry you felt the course wasn’t suited to you. We will consider the wording on the website to highlight the detail of the course before purchase and direct students clearly to the curriculum to help them ensure the course meets their needs.
We are pleased you decided to stick with the course and earn your certificate nevertheless – congratulations on this great achievement over 24 weeks!

I learnt a lot of new skills
I learnt a lot of new skills. the course is structured in such a way that you can fit it around your life. the units are easy to follow and very well explained. the tutors always answered questions promptly and gave good advice to help me progress.

I signed up to a “so called”…
I signed up to a “so called” professional bread and patisserie course at significant expense with Leiths. On the whole it’s not patisserie and has a greater focus on what I’d describe as housewife cakes and sweet treats (chocolate cake, brownies, muffins not Paris Brest, Mille Feuille, Caneles etc) On the whole these are laden with absurd amounts of sugar and lack the delicacy and finesse of genuine French patisserie. There is no flexibility or provision for healthier options and requests to that end are dismissed. I feel that my money has been wasted and I’ve not learned any patisserie skills at all only how to make sugar laden cakes. While I would never expect Patisserie or bread to be viewed as a healthy option I’m shocked that Leith’s feel no responsibility for allowing people to make smarter choices with regard to the use of fats and sugar.

Hi Mark, when you began voicing concerns about sugar content, we reached out to you privately as we were concerned that you may not be satisfied with the course. We care deeply about our students’ experiences, and we wanted to offer you an explanation for the use of sugar and fats from a teaching perspective in the context of a bread and patisserie course, and to offer you some options that may improve your experience. We explained that because students successfully completing this course are awarded an industry standard professional certificate, we ask students to cook the recipes as written, without adaptation (in the first instance) to ensure full parity and fairness for assessment purposes.
The first option we offered was that you could complete the course with alterations that suit you, and we would could issue you 2 separate certificates for our amateur baking and patisserie courses. We then asked if you had any interest in our professional Nutrition in Culinary Practice course which focuses on creating delicious dishes alongside an understanding of nutrition, offering to transfer you to this course at no extra cost.
Our many years of chef training have allowed us to develop courses which meet the requirements of the classic professional repertoire the industry expects. While low sugar and fat baking has an important place in the sector, this course does not purport to address this aspect and our publicly published curriculum outlines a classic set of essential skills, many of which are building blocks for even more advanced patisserie work.
You are right, the three recipes you mentioned are not explicitly covered on the course, however, alongside our deep dive into breads, we do cover a wide range of other recipes which are considered stalwarts of French Patisserie. Including (but not limited to) macarons, croissants, pain au chocolat, entremet, genoise, petit fours, garnishes, set desserts and many more.
You requested to be moved over to the Chef Skills course shortly after leaving this review, and because the same assessment restrictions apply to this professional course, we are concerned you will face the same issue. All this considered, we do not feel we have further options to offer you. We sincerely hope you find the right course for you, and we wish you all the best in your culinary journey.
