Each Skiacha focaccia is made in small batches using slow fermentation, high-hydration dough, and carefully selected ingredients. Skiacha operates through limited weekly drops rather than mass production. This allows every bake to be handled by hand, from mixing and folding the dough to baking, filling, and packaging. Orders are prepared fresh and delivered locally, with freshness and texture always prioritised over volume. The menu changes regularly and often features seasonal ingredients and classic Italian flavour combinations. As a small operation, Skiacha is constantly testing, refining, and improving recipes based on real customer feedback. Skiacha was started as a passion project, with the aim of bringing something genuinely well-made and thoughtfully produced to the local community. And what they put inside is just as exceptional. These are huge, generously stuffed sandwiches.
